Ingredients

For the Dough:

3 ½ cups all-purpose flour

1 tablespoon sugar

2 teaspoons salt

1 tablespoon Italian seasoning

2 ¼ teaspoons active dry yeast (1 packet)

1 cup warm water (about 110°F/45°C)

2 tablespoons olive oil

For the Topping:

1 cup shredded mozzarella cheese

1 tablespoon grated Parmesan cheese

1 teaspoon Italian seasoning

1 tablespoon olive oil (for brushing)

Instructions

  1. In a small bowl, combine warm water, sugar, and active dry yeast. Stir gently and let it sit for 5-10 minutes until frothy.
  2. In a large bowl, whisk together the flour, salt, and Italian seasoning. Create a well in the center of the dry ingredients.
  3. Pour the frothy yeast mixture and olive oil into the well of dry ingredients. Stir to combine until the dough starts to come together. Knead on a lightly floured surface for 8-10 minutes until smooth and elastic. If too sticky, sprinkle in more flour.
  4. Place the dough in a lightly oiled bowl, cover with a damp cloth, and let rise in a warm spot for about 1 hour, or until doubled in size.
  5. Preheat the oven to 375°F (190°C). Line two baking sheets with parchment paper.
  6. Roll out the dough into a 12 x 6 inch rectangle. You can make one large loaf or divide it into two smaller loaves. Brush the dough with olive oil and sprinkle with shredded mozzarella, Parmesan, and Italian seasoning. Press gently to make sure the cheese sticks.
  7. Cover the dough and let it rise for 30 minutes.
  8. Bake for 25-30 minutes, until golden brown on top and hollow when tapped. Optionally, mist the oven with water before baking for a crispier crust.
  9. Let the bread cool on a wire rack for at least 15 minutes before slicing. Serve warm or at room temperature.

Notes

  • For extra flavor, add garlic-infused olive oil before baking.
  • Make mini loaves by dividing the dough into smaller portions, perfect for sandwiches.
  • Use gluten-free flour for a gluten-free option, and add xanthan gum for structure.
