Ingredients

  • 8 small flour tortillas
  • 1 pound ground beef
  • 1 packet taco seasoning mix
  • 120 ml water
  • 240 g refried beans
  • 120 g shredded cheddar cheese
  • 120 g shredded Monterey Jack cheese
  • 80 g diced tomatoes, well drained
  • 35 g sliced black olives
  • 15 g sliced green onions
  • 30 g diced green chilies
  • Vegetable oil, for frying
  • 120 g mayonnaise
  • 30 g diced pickled jalapeños
  • 12 g sugar
  • 7 g ground cumin
  • 7 g paprika
  • 3 g garlic powder
  • 2 g cayenne pepper
  • Salt, to taste

Instructions

  1. In a bowl, mix mayonnaise, pickled jalapeños, sugar, cumin, paprika, garlic powder, cayenne pepper, and salt until smooth. Refrigerate.
  2. In a skillet over medium-high heat, cook ground beef until browned. Drain excess fat.
  3. Add taco seasoning and water to beef. Simmer until thickened. Set aside.
  4. In another skillet, heat a thin layer of oil over medium-high heat. Fry tortillas 1–2 minutes per side until crisp and golden. Drain on paper towels.
  5. Place one tortilla on a baking tray. Spread refried beans on top.
  6. Top with a second tortilla, then spread seasoned ground beef evenly.
  7. Add a third tortilla and spread a layer of the prepared sauce.
  8. Sprinkle cheddar and Monterey Jack cheese evenly on top.
  9. Add diced tomatoes, black olives, green onions, and green chilies.
  10. Broil for a few minutes until cheese is melted, bubbly, and lightly golden.
  11. Remove from oven, let rest briefly, then slice and serve warm.
