Ingredients

1 ½ cups all-purpose flour

1 tablespoon granulated sugar

½ teaspoon salt (or to taste)

1 teaspoon baking powder

3 cups corn kernels (fresh, frozen, or canned and drained)

2 large eggs (lightly beaten)

⅔ cup half-and-half (use more if the batter is too dry)

¼ cup vegetable oil (for frying)

Optional: 1 tablespoon chives (chopped)

Optional: Sour cream (for serving)

Instructions

  1. In a large mixing bowl, whisk together the flour, sugar, salt, and baking powder. Add the corn kernels and stir to coat them in the flour mixture.
  2. In a separate bowl, mix the half-and-half and eggs together. Pour this mixture into the dry ingredients and stir until a thick batter forms. If the batter seems too dry, add more half-and-half.
  3. Heat vegetable oil in a skillet over medium heat. Drop 2-4 quarter-cup portions of batter into the skillet and fry for 2-3 minutes per side until golden brown. Adjust heat if needed.
  4. Once cooked, place the fritters on a plate and sprinkle with chopped chives. Serve with sour cream if desired.
