Ingredients

  • For the meatloaf:
    • 1 lb ground beef
    • 1 cup breadcrumbs
    • 1 small onion, finely chopped
    • 1 small bell pepper, finely chopped
    • 1/2 cup milk
    • 1 large egg
    • 1/3 cup ketchup, plus extra for topping
    • 1 tablespoon Worcestershire sauce
    • 1 teaspoon garlic powder
    • 1 teaspoon dried oregano
    • 1 teaspoon salt
    • 1/2 teaspoon black pepper
  • For the potato casserole:
    • 2 lb russet potatoes, peeled and diced
    • 2 cups shredded cheddar cheese
    • 1 cup sour cream
    • 1/2 cup milk
    • 3 tablespoons butter
    • 1 teaspoon garlic powder
    • 1 teaspoon salt
    • 1/2 teaspoon black pepper

Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan and a medium baking dish.
  2. In a large bowl, mix ground beef, breadcrumbs, onion, bell pepper, milk, egg, ketchup, Worcestershire, garlic powder, oregano, salt, and pepper until just combined.
  3. Transfer meat mixture to loaf pan. Spread a thin layer of ketchup on top. Bake for 55–65 minutes, or until internal temperature reaches 160°F (71°C). Let rest 10 minutes before slicing.
  4. While meatloaf bakes, boil diced potatoes in salted water for 10–12 minutes until tender. Drain.
  5. Mash potatoes with butter, sour cream, and cheddar cheese. Add milk gradually until smooth. Season with garlic powder, salt, and pepper.
  6. Transfer mashed potatoes to prepared baking dish. Bake for 20–25 minutes, until top is golden and heated through.
  7. Serve sliced meatloaf with a side of the potato casserole.
