Ingredients

  • 1 pound ground beef
  • 1/2 cup BBQ sauce, plus extra for topping
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 1/2 onion, finely chopped
  • 1 teaspoon garlic powder
  • salt, to taste
  • black pepper, to taste
  • 2 cups prepared mashed potatoes
  • 1 1/2 cups shredded cheddar cheese
  • chopped green onions, for garnish

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.
  2. In a bowl, mix ground beef, BBQ sauce, breadcrumbs, egg, onion, garlic powder, salt, and black pepper until combined.
  3. Press the mixture evenly into the prepared baking dish.
  4. Bake for 20 minutes until mostly cooked through.
  5. Remove from oven and spread mashed potatoes evenly over the meat layer.
  6. Sprinkle shredded cheddar cheese over the potatoes and drizzle extra BBQ sauce on top.
  7. Return to the oven and bake for 15–20 minutes until cheese is melted and bubbly.
  8. Let rest for a few minutes, garnish with chopped green onions, and serve.
