Ingredients

  • 2 cups whole milk
  • 1 cup water
  • 1 1/2 teaspoons unsalted butter
  • 1/4 teaspoon salt
  • 1/3 cup semolina flour
  • 1 tablespoon white granulated sugar

Instructions

  1. In a medium saucepan, combine milk, water, butter, and salt. Heat over medium-high until gently boiling, stirring occasionally.
  2. Remove from heat and slowly pour in the semolina in a steady stream while whisking constantly to prevent lumps.
  3. Return the saucepan to medium heat and whisk until the mixture comes back to a boil, about 2 minutes.
  4. Reduce heat to low, cover, and cook for about 20 minutes, stirring occasionally to prevent sticking.
  5. Once thick and smooth, remove from heat and stir in the sugar until dissolved.
  6. Let stand for 3 to 5 minutes to thicken slightly.
  7. Serve warm.

Notes

  • Whisk continuously while adding semolina to avoid lumps.
  • For a richer version, use all milk instead of water.
  • Adjust sugar to taste or omit for a less sweet version.
  • Semolina thickens as it cools; add milk or water when reheating to loosen.
  • Store in an airtight container in the refrigerator for up to 3 days.
  • Freezing is not recommended as texture may change.
