Ingredients

  • 12 ounces dry spaghetti or fettuccine
  • 1 large garlic clove
  • 1 large ripe avocado, peeled and pitted
  • 1 cup fresh spinach, packed
  • ¼ cup pecans
  • ¼ cup fresh basil leaves
  • ½ cup freshly grated Parmesan cheese (optional)
  • 2 tablespoons fresh lemon juice
  • ¾ cup reserved pasta water (more if needed)
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Bring a large pot of salted water to a boil. Cook spaghetti or fettuccine according to package instructions until al dente. Reserve at least 1 cup of pasta water before draining.
  2. While the pasta cooks, add garlic, avocado, spinach, pecans, basil, Parmesan (if using), and lemon juice to a blender or food processor.
  3. Add about ¾ cup of hot reserved pasta water to the blender and blend until smooth and creamy. Add more pasta water if needed to reach a pourable consistency.
  4. Return the drained pasta to the pot and pour the sauce over the noodles. Toss until the pasta is evenly coated.
  5. Season with salt and freshly ground black pepper to taste.
  6. Serve immediately for best flavor and texture.
