Ingredients

  • 4 boneless, skinless chicken breasts or thighs
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 3 garlic cloves, minced
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 package (5.2 oz) Boursin Garlic & Fine Herbs cheese
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1 tbsp fresh parsley, chopped
  • 1 tsp fresh thyme leaves
  • Mashed potatoes, pasta, or crusty bread for serving
  • Steamed green beans or asparagus, for serving

Instructions

  1. Pat the chicken dry and season both sides with salt, pepper, and paprika.
  2. Heat olive oil and butter in a large skillet over medium-high heat until the butter foams.
  3. Sear chicken for 5–6 minutes per side until golden brown. Remove from the skillet and set aside.
  4. In the same skillet, sauté minced garlic for 30 seconds.
  5. Deglaze with chicken broth, scraping up browned bits. Simmer for 2 minutes.
  6. Reduce heat to low and whisk in the Boursin cheese until melted and smooth.
  7. Stir in heavy cream, parsley, and thyme to form a creamy sauce.
  8. Return the chicken to the skillet, spoon the sauce over it, and simmer 3–4 minutes until chicken is cooked through (165°F).
  9. Serve hot with mashed potatoes, pasta, or crusty bread, and a side of vegetables.

Notes

  • Use chicken thighs for a juicier, richer option.
  • Add sautéed mushrooms for extra depth and umami.
  • If Boursin isn’t available, substitute with a mix of cream cheese, garlic powder, and dried herbs.
  • Reheat gently with a splash of cream or broth to prevent the sauce from separating.
  • This dish pairs beautifully with mashed potatoes, pasta, or steamed vegetables.
