Ingredients

  • 2 cups thick Greek-style yogurt
  • 2 cups pitted cherries, halved
  • 2 tablespoons maple syrup (or more to taste)
  • 1 teaspoon vanilla extract
  • Zest of 1/2 lemon
  • Zest of 1/2 lime
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon ground cardamom
  • 1/8 teaspoon ground clove
  • 1/8 teaspoon ground nutmeg
  • Pinch of ground coriander

Instructions

  1. In a medium bowl, stir together yogurt, maple syrup, vanilla extract, lemon zest, lime zest, cinnamon, cardamom, clove, nutmeg, and coriander until smooth. Taste and adjust sweetness or spices if desired.
  2. Line a small rimmed baking sheet with parchment paper. Arrange halved cherries in a tight, even layer.
  3. Pour the yogurt mixture over the cherries and gently spread with a spatula to cover evenly.
  4. Freeze for at least 4 hours, or until completely firm.
  5. Once frozen, break into pieces and enjoy immediately or store in the freezer.

Notes

  • Use thick yogurt (dairy or plant-based) to prevent iciness.
  • Adjust spices or sweetener to match your flavor preferences.
  • Frozen cherries work well—thaw slightly and pat dry before using.
  • For added cherry flavor, use almond extract or more vanilla.
  • Store bark in the freezer in a sealed container for up to 1 month.
