Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp cayenne pepper (optional)
  • Salt and black pepper, to taste
  • 1 tbsp fresh lime juice
  • 2 cups cooked white or jasmine rice
  • 2 tbsp chopped cilantro
  • For the Creamy Chipotle Sauce:
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 12 chipotle peppers in adobo, blended
  • 1 tbsp lime juice
  • 1 tsp honey
  • 1/2 tsp garlic powder
  • Salt, to taste

Instructions

  1. In a bowl, combine shrimp with olive oil, smoked paprika, garlic powder, cayenne pepper, lime juice, salt, and black pepper. Mix to coat evenly.
  2. Heat a skillet over medium-high heat. Add shrimp and sear for 2–3 minutes per side, until cooked through and lightly blackened.
  3. In a separate bowl, whisk together mayonnaise, sour cream, blended chipotle peppers, lime juice, honey, garlic powder, and salt until smooth to make the creamy chipotle sauce.
  4. Divide cooked rice between serving bowls. Top with seared shrimp.
  5. Drizzle the creamy chipotle sauce generously over the shrimp and rice.
  6. Sprinkle with chopped cilantro and add an optional squeeze of lime juice before serving.
