Ingredients

  • 1 cup (225 g) full-fat cottage cheese
  • ¼ cup (25 g) unsweetened cocoa powder
  • 3 tablespoons (45 ml) pure maple syrup or honey
  • 2 tablespoons (30 ml) milk of choice
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon (15 g) melted dark chocolate (optional)
  • Pinch of fine salt

Instructions

  1. Add the cottage cheese to a high-speed blender or food processor and blend for 1–2 minutes until completely smooth, scraping down the sides as needed.
  2. Add cocoa powder, maple syrup or honey, milk, vanilla extract, melted dark chocolate (if using), and salt.
  3. Blend again until the mixture is silky, thick, and fully combined. Adjust sweetness if desired.
  4. Spoon the mousse into serving glasses or bowls.
  5. Refrigerate for at least 1 hour to chill and thicken.
  6. Serve chilled with optional garnishes like shaved dark chocolate, berries, or cocoa powder.

Notes

  • Full-fat cottage cheese yields the creamiest texture, but low-fat can be used.
  • Blend thoroughly for the smoothest consistency.
  • Adjust sweetness to taste with additional maple syrup or honey.
  • Store in an airtight container in the refrigerator for up to 3 days.
  • If too firm after chilling, let sit at room temperature for 10–15 minutes and stir gently.
