Ingredients

  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/3 cup sliced green olives
  • 2 tablespoons olive brine
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Bring a large pot of salted water to a boil and cook spaghetti until al dente. Reserve 1/2 cup pasta water, then drain.
  2. Heat olive oil in a skillet over medium heat and sauté garlic for about 1 minute until fragrant.
  3. Add heavy cream and let it simmer for 2–3 minutes until slightly thickened.
  4. Stir in Parmesan cheese until the sauce is smooth and creamy.
  5. Add sliced olives and olive brine, then season with black pepper, salt, and red pepper flakes if using.
  6. Toss cooked spaghetti in the sauce until fully coated, adding reserved pasta water as needed to adjust consistency.
  7. Cook for another 1–2 minutes, then remove from heat and garnish with parsley before serving.
