Ingredients

  • 250 grams pasta (fettuccine or spaghetti)
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 300 grams fresh mushrooms, sliced
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 1/2 cup pasta cooking water
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon chili flakes (optional)
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Cook pasta in salted boiling water until al dente. Reserve 1/2 cup pasta water, then drain.
  2. Heat olive oil and butter in a pan over medium heat.
  3. Add mushrooms and cook for 6–8 minutes until golden and tender.
  4. Stir in garlic and cook for 1 minute until fragrant.
  5. Add heavy cream and bring to a gentle simmer.
  6. Mix in parmesan, salt, pepper, oregano, and chili flakes, stirring until smooth.
  7. Add cooked pasta and toss to coat.
  8. Add reserved pasta water gradually to adjust consistency.
  9. Cook for 1–2 minutes until well combined.
  10. Garnish with parsley and serve immediately.
