Ingredients

  • 12 ounces large shrimp, peeled, deveined, and butterflied
  • 1 pinch cayenne pepper
  • ¼ teaspoon smoked paprika
  • 3 cloves garlic, crushed
  • 2 thick slices French bread (½- to ¾-inch thick)
  • 6 tablespoons clarified butter, melted, divided
  • 2 teaspoons fresh lemon zest
  • 2 tablespoons fresh lemon juice
  • ½ cup heavy cream
  • 2 tablespoons minced fresh Italian parsley
  • 1 pinch salt, or to taste

Instructions

  1. Place the butterflied shrimp in a mixing bowl. Add cayenne pepper, smoked paprika, and crushed garlic. Toss until evenly coated. Refrigerate until needed.
  2. Trim most of the crust off the French bread slices.
  3. In a skillet over medium heat, melt 4 tablespoons of clarified butter. Add the bread and toast until golden brown on both sides, about 3–4 minutes per side. Remove and set aside. Wipe out any crumbs from the skillet.
  4. Add the remaining 2 tablespoons of clarified butter to the skillet and increase the heat to high until the butter begins to lightly smoke.
  5. Add the shrimp and spread them out evenly. Sear without stirring for 1 minute.
  6. Sprinkle with lemon zest, then add lemon juice and heavy cream. Stir gently, scraping up browned bits from the pan. Let boil and reduce for 1½ to 2 minutes until sauce thickens and shrimp are fully cooked.
  7. Turn off the heat and stir in minced parsley. Adjust salt if needed.
  8. Spoon the shrimp and sauce over the toasted bread slices. Serve immediately while warm.

  • Use raw shrimp for best flavor absorption.
  • Clarified butter prevents soggy bread and adds richness — regular butter can be used if needed.
