Ingredients

  • 2 bulbs garlic, cloves peeled and roughly chopped
  • 2 tablespoons butter
  • 1 large onion, diced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream (or plant-based cream for vegan)
  • 2 tablespoons olive oil
  • 34 slices bread, cubed (for croutons)
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. In a large pot, melt butter over medium heat. Add garlic and onion, sautéing until softened and fragrant, about 6–8 minutes.
  2. Pour in broth and bring to a simmer. Cook until garlic is tender, about 15–20 minutes.
  3. Blend soup with an immersion blender (or in batches in a regular blender) until smooth.
  4. Stir in heavy cream. Season with salt and pepper. Warm gently without boiling.
  5. For croutons: Preheat oven to 375°F (190°C). Toss cubed bread with olive oil, salt, and pepper. Bake 8–10 minutes until golden and crisp.
  6. Ladle soup into bowls, top with croutons, and garnish with parsley if desired.
