Ingredients

  • 1/4 cup butter
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced

  • 1/2 cup heavy whipping cream
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 4 ounces cream cheese, cut into small cubes
  • 2 tablespoons fresh lemon juice
  • 2 plum tomatoes, chopped
  • 2 teaspoons minced fresh parsley
  • Grated Parmesan cheese, optional for serving

Instructions

  1. In a small bowl, combine the lemon zest, minced parsley, and minced garlic for the topping. Set aside.
  2. Cook the fettuccine in a large pot of salted boiling water until al dente. Drain and set aside.
  3. In a large skillet over medium-high heat, melt the butter. Add the chopped onion and cook for 2 to 3 minutes, stirring frequently, until softened.
  4. Add the minced garlic and lemon zest to the skillet and cook for 1 minute, stirring constantly.
  5. Stir in the heavy cream, salt, and black pepper. Reduce heat slightly and whisk in the cream cheese until melted and smooth.
  6. Remove skillet from heat and stir in the lemon juice.
  7. Add the cooked fettuccine, chopped tomatoes, and parsley to the skillet. Toss until evenly coated with sauce.
  8. Serve immediately, topped with the lemon-garlic mixture and optional grated Parmesan cheese.
