Ingredients

  • 1½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • 4 tablespoons unsalted butter, melted and cooled, plus extra for greasing
  • 2 large egg yolks
  • 1 can (14 ounces) sweetened condensed milk
  • ½ cup freshly squeezed lemon juice (about 3 medium lemons)

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease an 8-inch square baking pan.
  2. In a bowl, mix graham cracker crumbs and sugar. Add melted butter and stir until evenly moistened.
  3. Press the crumb mixture firmly into the bottom of the prepared pan.
  4. Bake the crust for 10 minutes or until lightly golden. Remove from oven and keep warm.
  5. In a separate bowl, whisk egg yolks until smooth. Add sweetened condensed milk and whisk to combine. Gradually whisk in lemon juice until smooth and creamy.
  6. Pour lemon filling over the warm crust and spread evenly.
  7. Bake for 14–16 minutes, or until the filling is just set and no longer jiggly in the center.
  8. Cool completely at room temperature, then refrigerate for at least 2 hours before slicing into squares.

Notes

  • Add 1 tsp lemon zest to the filling for extra flavor.
  • Use fresh lemon juice for the best taste, but bottled juice works in a pinch.
  • For clean slices, use a sharp knife wiped clean between cuts.
  • Dust with powdered sugar before serving if desired.
