Ingredients

  • 1/2 white onion, diced
  • 4 cloves garlic, minced
  • 2 tbsp olive oil or unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth
  • 2 cups whole milk
  • 2 lbs red potatoes, peeled and diced
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup minced chives
  • Salt and black pepper, to taste

Instructions

  1. In a large pot, heat olive oil or butter over medium heat. Add diced onion and sauté for 5 minutes until translucent. Stir in minced garlic and cook 1 minute more.
  2. Sprinkle flour over onion mixture, stirring constantly for 1–2 minutes to form a roux.
  3. Gradually whisk in chicken broth, followed by milk, until smooth.
  4. Add diced potatoes. Bring to a gentle simmer and cook 15–20 minutes, until potatoes are tender.
  5. Lightly mash some potatoes in the pot to thicken the soup while leaving chunks for texture.
  6. Stir in shredded cheddar, sour cream, and minced chives. Mix until cheese is melted and fully incorporated.
  7. Season with salt and black pepper to taste. Ladle into bowls, garnish with extra cheese and chives, and serve hot with bread if desired.
