Ingredients

  • 1/2 cup raw pumpkin seeds
  • 1 tablespoon extra virgin olive oil
  • 1 small garlic clove
  • 1 teaspoon maple syrup (optional)
  • 1 teaspoon apple cider vinegar or lemon juice
  • 2 tablespoons fresh mint leaves
  • 1/2 cup water, plus more as needed
  • 1 pinch salt
  • 1 pinch black pepper
  • Optional: 2 tablespoons fresh cilantro leaves

Instructions

  1. Place pumpkin seeds in a bowl and cover with water. Soak for at least 2 hours.
  2. Drain and rinse seeds with fresh water.
  3. Add soaked seeds, olive oil, garlic, maple syrup (if using), vinegar or lemon juice, mint, 1/2 cup water, salt, and pepper to a blender.
  4. Blend on high until smooth and creamy.
  5. If too thick, add more water a tablespoon at a time until desired consistency is reached.
  6. Taste and adjust seasoning. Blend in cilantro at the end if using.
