Ingredients

  • 14 oz (400 g) long-cut pasta (e.g., linguine)
  • 16 oz (450 g) jar of roasted red peppers, drained
  • 1 tbsp butter
  • 1 medium white onion, diced
  • 2 small cloves garlic, finely diced
  • 1 cup (240 ml) heavy cream, at room temperature
  • ½ cup (40 g) grated Parmesan (plus extra for garnish)
  • 1 tbsp fresh parsley, finely chopped (plus more for garnish)
  • ½ tsp smoked paprika
  • Pinch of chili flakes (optional)
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Bring a large pot of salted water to a boil and cook pasta until al dente. Reserve some pasta water, then drain the pasta.
  2. Meanwhile, drain the roasted red peppers and gently squeeze out any excess liquid.
  3. In a large skillet, melt the butter over medium heat. Sauté the diced onion until soft and slightly golden, about 5 minutes. Add garlic and cook for 1 minute more.
  4. Transfer the onion, garlic, and roasted red peppers to a blender or food processor and blend until smooth. If too thick, add a splash of stock, milk, or water to loosen.
  5. Return the blended mixture to the pan and bring to a gentle simmer. Stir in the cream until smooth and fully combined.
  6. Add Parmesan, parsley, smoked paprika, chili flakes (if using), salt, and pepper. Simmer a few more minutes until slightly thickened.
  7. Add the cooked pasta directly to the sauce and toss to coat. Add reserved pasta water as needed to loosen the sauce and help it cling.
  8. Serve immediately with extra Parmesan and parsley on top.

  • To make it vegan, substitute dairy-free cream and vegan Parmesan.
