Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 24 oz cream cheese, softened (3 blocks)
  • 1 cup granulated sugar
  • 3 large eggs, at room temperature
  • 1 cup heavy cream
  • 1 tablespoon cornstarch
  • 1 tablespoon vanilla extract
  • 1/4 teaspoon salt
  • 1/3 cup granulated sugar (for topping)

Instructions

  1. Preheat oven to 325°F (160°C). Grease a 9-inch springform pan and wrap the outside in aluminum foil.
  2. Mix graham cracker crumbs, melted butter, and 2 tablespoons sugar. Press into the bottom of the pan and bake for 10 minutes. Set aside to cool.
  3. In a large bowl, beat cream cheese until smooth. Add 1 cup sugar and mix until combined.
  4. Beat in eggs one at a time on low speed.
  5. Add heavy cream, cornstarch, vanilla, and salt. Mix just until smooth.
  6. Pour batter over the cooled crust and smooth the top.
  7. Place pan in a roasting pan. Pour hot water into the roasting pan to reach halfway up the sides of the springform pan.
  8. Bake for 60–70 minutes, or until edges are set and center slightly jiggles.
  9. Turn off oven, crack the door, and cool the cheesecake in the oven for 1 hour.
  10. Remove, let cool to room temperature, then refrigerate for at least 4 hours or overnight.
  11. Before serving, sprinkle 1/3 cup granulated sugar evenly over the top.
  12. Use a kitchen torch to caramelize the sugar until golden and crisp. Let sit 1–2 minutes before slicing.
