Ingredients

  • For the Carrot Fries:
  • 1 pound carrots, peeled and cut into fry shapes (about 45 medium carrots)
  • 3 tablespoons extra-virgin olive oil
  • 2 teaspoons garlic powder
  • ½ cup grated Parmesan cheese
  • Kosher salt, to taste
  • Ground black pepper, to taste
  • For the Sriracha Dipping Sauce:
  • ½ cup non-fat Greek yogurt
  • 1 tablespoon Sriracha (adjust to taste)
  • 1 teaspoon honey
  • Pinch of salt

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Peel and cut carrots into fry-shaped sticks, about ¼-inch thick.
  3. In a large bowl, toss carrots with olive oil to coat evenly.
  4. Add garlic powder, Parmesan cheese, salt, and pepper. Toss again until well coated.
  5. Spread in a single layer on a lightly greased baking sheet (use two sheets if needed to avoid overcrowding).
  6. Bake for 15 minutes, flip fries, then bake another 15 minutes until golden and crisp. Use convection for extra crispiness in the last 5 minutes if available.
  7. While fries bake, mix Greek yogurt, Sriracha, honey, and a pinch of salt in a small bowl. Stir until smooth.
  8. Serve fries hot with the Sriracha dipping sauce.

Notes

  • Use nutritional yeast or vegan cheese for a dairy-free version.
  • Add cayenne or red chili flakes to carrots for extra heat.
  • Mix in dried herbs like oregano or rosemary for extra flavor.
  • Swap Greek yogurt for regular yogurt, sour cream, or vegan mayo for the dip.
  • Store leftover fries in the fridge and reheat in oven at 350°F for 5–8 minutes to regain crispiness.
  • Air Fryer Option: Cook at 350°F (175–180°C) for 15–20 minutes, shaking halfway through.
