Ingredients

  • 1.5 cups (250 g) pitted dates
  • 2 tablespoons almond butter
  • 1 cup (30 g) puffed rice cereal
  • 0.5 cup (15 g) puffed quinoa
  • 3 tablespoons maple syrup
  • 1 teaspoon coconut oil
  • 1 pinch kosher salt
  • 2.6 oz (75 g) dark chocolate

Instructions

  1. Soak the pitted dates in hot water for 10 minutes to soften, then drain well.
  2. Add the dates and almond butter to a food processor and blend until smooth and caramel-like.
  3. Transfer the mixture to a bowl and stir in puffed rice, puffed quinoa, maple syrup, coconut oil, and salt. Mix until evenly combined.
  4. Form into 12 balls, about 1 oz (30 g) each, and place on a lined baking sheet.
  5. Melt the dark chocolate and dip each ball to fully coat. Return to the baking sheet.
  6. Refrigerate for 20 minutes, or until the chocolate sets. Serve chilled or at room temperature.
