Ingredients

  • 1/2 cup almond flour
  • 2 large eggs, beaten
  • 1/2 cup crushed flaxseed, low-carb panko, or ground almonds
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt (optional)
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil spray
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • 1/2 cup plain Greek yogurt, unsweetened and low-fat
  • 1 tablespoon fresh chives, chopped
  • 1 teaspoon fresh lemon juice

Instructions

  1. Preheat air fryer to 390°F (200°C) or oven to 400°F (205°C) and line a baking sheet with parchment paper.
  2. In one bowl, mix almond flour, garlic powder, smoked paprika, salt, and pepper. Place beaten eggs in a second bowl. Add flaxseed, panko, or ground almonds to a third bowl.
  3. Dip each mushroom in egg, then coat with flour mix, and finally with the flaxseed mixture, pressing to adhere.
  4. Arrange mushrooms in a single layer in air fryer basket or on baking sheet. Spray with olive oil.
  5. Air fry for 10–12 minutes or bake for 15–18 minutes, turning halfway, until golden and crisp.
  6. Meanwhile, prepare the dip by mixing Greek yogurt, chives, and lemon juice until smooth.
  7. Garnish mushrooms with parsley and serve warm with dip.
