Ingredients

  • 500 g potato gnocchi (homemade or quality store-bought)
  • 1 tablespoon olive oil
  • 60 g butter, cut into cubes
  • 810 fresh sage leaves
  • Optional: freshly grated Parmesan cheese
  • Optional: lemon zest for serving

Instructions

  1. Bring a large pot of salted water to a boil. Add the gnocchi and cook until they float, then cook 30 seconds more. Transfer to a tray in a single layer to dry slightly.
  2. In a non-stick skillet over medium-high heat, add olive oil and a small knob of butter. Add gnocchi in a single layer and fry for 5–6 minutes, turning occasionally until crispy and golden. Drain on paper towels and repeat if needed.
  3. In the same pan, melt the cubed butter over medium heat. Let it bubble and begin to brown, swirling gently. Add sage leaves and cook until the butter is golden brown and aromatic, about 3–4 minutes. Remove from heat.
  4. Return crispy gnocchi to the pan with brown butter and sage. Toss to coat evenly.
  5. Serve warm with optional Parmesan and lemon zest.
