Ingredients

  • 2 medium zucchini (about 350 g), sliced into 1/4-inch rounds
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/2 cup finely grated Parmesan cheese (about 50 g)

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
  2. In a large bowl, toss zucchini rounds with olive oil, salt, pepper, and garlic powder until evenly coated.
  3. Arrange zucchini slices in a single layer on the prepared baking sheet, spaced apart.
  4. Sprinkle Parmesan cheese evenly over the zucchini rounds.
  5. Bake for 10 minutes, or until zucchini begins to soften and cheese turns golden.
  6. Switch oven to broil and cook for 2–3 more minutes until tops are crisp and lightly browned.
