Ingredients

1½ cups cooked chickpeas (or canned, drained and rinsed)

Extra-virgin olive oil, for drizzling

Sea salt, to taste

Paprika, curry powder, or other spices (optional)

Instructions

  1. Preheat oven to 425°F (220°C) and line a large baking sheet with parchment paper.
  2. Spread chickpeas on a clean towel and pat completely dry, removing any loose skins.
  3. Transfer chickpeas to the baking sheet. Drizzle with olive oil, sprinkle with salt, toss to coat, and spread in a single layer.
  4. Roast for 20–30 minutes, checking at 20 minutes, until golden brown and crisp.
  5. Remove from oven and toss with paprika, curry powder, or preferred spices while still warm.

Notes

  • Drying the chickpeas thoroughly before roasting is key to crispiness.
  • For an oil-free version, skip the olive oil, but note they may be less crispy.
  • Season after roasting to prevent spices from burning.
