Ingredients

  • 1 tsp avocado oil or olive oil
  • 1 large yellow onion, diced
  • 4 garlic cloves, minced
  • lbs grass-fed ground beef
  • 1 Tbsp smoked paprika
  • 1 Tbsp dry mustard
  • 1 jar (15 oz) organic tomato sauce
  • 6 cups beef bone broth
  • 1 large carrot, peeled and chopped
  • 3 celery stalks, chopped
  • 12 large red or orange bell peppers, seeded and diced
  • 2 cups chopped mushrooms (button or crimini)
  • Sea salt, to taste (about 1/2 tsp)
  • Freshly ground black pepper, to taste (about 1/2 tsp)
  • Optional garnishes: 1 cup shredded cheese, chopped pickles, diced or sliced onions, fresh tomato slices

Instructions

  1. Heat a large skillet over medium-high heat. Add the oil and sauté the diced onion for about 3 minutes until translucent.
  2. Stir in the minced garlic and cook for 1 minute until fragrant.
  3. Add the ground beef and cook for 6–7 minutes until browned and no longer pink. Season with smoked paprika, dry mustard, salt, and pepper.
  4. Drain any excess grease and transfer the beef mixture to the slow cooker.
  5. Add tomato sauce, beef bone broth, carrot, celery, bell peppers, and mushrooms to the slow cooker. Stir to combine.
  6. Cook on HIGH for 3–4 hours or on LOW for 6–8 hours.
  7. Once cooked, ladle into bowls and garnish with shredded cheese, pickles, onions, or tomato slices as desired.
  8. Serve hot and enjoy immediately.
