Ingredients

  • 2 pounds ground beef
  • 1 cup breadcrumbs
  • ½ cup grated Parmesan cheese
  • ¼ cup milk
  • 2 large eggs
  • 1 tablespoon Worcestershire sauce

  • 2 large onions, thinly sliced
  • 2 tablespoons butter

Instructions

  1. Prepare the Onions: Melt butter in a large skillet over medium heat. Add sliced onions and sauté until softened and lightly browned, stirring occasionally.
  2. Make the Meatloaf Mixture: In a large bowl, combine ground beef, breadcrumbs, Parmesan, milk, eggs, Worcestershire sauce, salt, and pepper. Mix gently until evenly incorporated.
  3. Layer the Crockpot: Spread half of the sautéed onions on the bottom of the crockpot. Shape the meat mixture into a loaf and place it on top of the onions. Spoon the remaining onions over the top.
  4. Cook: Cover and cook on low for 6–8 hours or high for 3–4 hours, until the internal temperature reaches 160°F (70°C).
  5. Add the Cheese: About 15 minutes before serving, layer slices of Swiss cheese on top. Cover and let the cheese melt completely.
  6. Rest and Serve: Carefully remove the meatloaf from the crockpot and let it rest for a few minutes. Slice and serve with onions and juices spooned over each portion.
