Ingredients

  • 3 thick slices of bread (such as brioche, whole wheat, or sourdough)
  • 1/3 cup plain whole milk yogurt
  • 1 large egg
  • 12 teaspoons maple syrup (optional, for sweet version)
  • Optional sweet add-ins: 2 tablespoons mashed berries, 1 teaspoon nut butter, 1/8 teaspoon ground cinnamon, 1/4 teaspoon vanilla extract, 1/4 teaspoon lemon zest
  • Optional savory add-ins: 2 tablespoons finely grated carrot or chopped broccoli, 2 tablespoons grated cheese, 1/8 teaspoon garlic powder, 1/8 teaspoon smoked paprika or cumin
  • Optional toppings after baking: fresh fruit slices, chopped nuts or seeds, shredded coconut, granola, chopped herbs or green onion

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together yogurt and egg until smooth. For sweet toast, add maple syrup and desired sweet add-ins. For savory toast, skip the sweetener and mix in savory add-ins.
  3. Place bread slices on the prepared sheet. Press down the centers gently to create shallow wells.
  4. Spoon the custard mixture into the wells of each slice, spreading evenly. Add any toppings as desired.
  5. Bake for 10–12 minutes, until the custard is set and the edges of the bread are golden.
  6. Let cool slightly before serving warm.
