Ingredients

  • 1 ½ cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 tablespoon granulated sugar
  • ¼ teaspoon salt
  • 1 ¼ cups milk
  • 2 large eggs
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • Cooking spray or oil (for greasing pan)
  • Chocolate chips (for eyes, buttons, and mouth)
  • Sliced strawberries or raspberries (for scarf)
  • Whipped cream or mini marshmallows (for snow)
  • Pretzel sticks (for arms)
  • Orange jelly bean, candy, or carrot sliver (for nose)

Instructions

  1. In a bowl, whisk flour, baking powder, sugar, and salt. Add milk, eggs, melted butter, and vanilla. Mix until smooth.
  2. Heat a non-stick skillet or griddle over medium heat and grease lightly with oil or cooking spray.
  3. Pour batter in three sizes: large, medium, and small to form the base, torso, and head of the snowman. Cook until bubbles form, flip, and cook until golden.
  4. Stack pancakes on a plate from largest to smallest.
  5. Decorate with chocolate chips for eyes, mouth, and buttons. Add a piece of orange candy or carrot for the nose.
  6. Lay fruit slices around the neck for a scarf and insert pretzel sticks as arms.
  7. Garnish with whipped cream or mini marshmallows around the snowman for a snowy effect. Serve warm.

Notes

  • Add cinnamon or nutmeg to batter for a holiday spice boost.
  • Use raisins, dried cranberries, or icing in place of chocolate chips.
  • Make gluten-free using a 1:1 gluten-free flour blend.
  • Swap half the flour for whole wheat for a healthier twist.
  • Draw hats or accents with chocolate syrup or maple syrup for added fun.
