Ingredients

  • 4 large apples (such as Honeycrisp or Fuji)
  • 1 cup pitted dates, finely chopped
  • 1/2 cup walnuts, chopped
  • 1/4 cup almonds, chopped
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon honey
  • 1/2 teaspoon vanilla extract
  • 1/2 cup water or apple juice

Instructions

  1. Preheat oven to 180°C (350°F).
  2. Wash and core the apples, leaving the bottom intact, and place them in a baking dish.
  3. In a bowl, mix dates, walnuts, almonds, melted butter, cinnamon, nutmeg, honey, and vanilla extract until combined.
  4. Spoon the filling into the apples, packing gently.
  5. Pour water or apple juice into the bottom of the baking dish.
  6. Cover loosely with foil and bake for 25 minutes.
  7. Remove foil and bake for another 15–20 minutes until apples are tender.
  8. Let cool slightly before serving.

Notes

  • Swap walnuts and almonds with pecans or hazelnuts if desired.
  • Add shredded coconut or dried fruits for extra texture and flavor.
  • Drizzle extra honey or maple syrup before baking for added sweetness.
