Ingredients

  • 2 cups pitted dates (soft, such as Medjool)
  • 1 cup desiccated coconut, plus extra for coating
  • 1/2 cup chopped almonds or walnuts
  • 1 tablespoon butter or coconut oil
  • 1/2 teaspoon ground cinnamon (optional)
  • 1 teaspoon vanilla extract
  • 1 tablespoon sesame seeds (optional)

Instructions

  1. Finely chop the dates or process them into a sticky paste.
  2. Melt butter or coconut oil in a pan over low heat.
  3. Add the date paste and stir for 3–5 minutes until softened.
  4. Mix in nuts, cinnamon, vanilla extract, and sesame seeds.
  5. Stir until evenly combined and slightly firm.
  6. Remove from heat and let cool slightly.
  7. Shape into small logs or cylinders.
  8. Roll each piece in desiccated coconut.
  9. Place on a tray and let cool completely before serving.
