Ingredients

  • 1½ cups blanched almond flour
  • ¼ teaspoon sea salt
  • ¼ teaspoon baking soda
  • 3 large eggs
  • ¼ cup grapeseed oil or palm shortening
  • ¼ cup honey or agave nectar
  • 1 tablespoon vanilla extract
  • 1 cup chopped walnuts
  • 1 cup pitted and chopped dates

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease an 8×8-inch baking dish.
  2. In a large bowl, mix almond flour, sea salt, and baking soda.
  3. In a separate bowl, whisk together eggs, oil, honey (or agave nectar), and vanilla extract.
  4. Combine wet ingredients with the dry ingredients and stir until fully incorporated.
  5. Fold in chopped walnuts and dates evenly.
  6. Pour the batter into the prepared baking dish and smooth the top.
  7. Bake for 22–30 minutes or until golden brown and a toothpick inserted in the center comes out clean.
  8. Let the bars cool completely in the pan before slicing and serving.

Notes

  • Use blanched almond flour for best texture; almond meal can make bars too dense.
  • If dates are dry, soak in warm water for 10 minutes and drain before using.
