Ingredients

12 oz elbow macaroni or rotini pasta

1 cup dill pickles, chopped

1 cup cheddar cheese, cubed or shredded

1/2 red onion, finely chopped

2 tablespoons fresh dill, chopped

3/4 cup mayonnaise

1/4 cup sour cream (optional)

1/4 cup dill pickle juice

1/2 teaspoon garlic powder

Salt and black pepper, to taste

Instructions

  1. Cook pasta according to package directions until al dente. Drain and rinse under cold water.
  2. Chop pickles, onion, dill, and cube cheese.
  3. In a bowl, whisk together mayonnaise, sour cream (if using), pickle juice, garlic powder, salt, and pepper.
  4. Combine pasta, pickles, cheese, onion, and dill in a large bowl. Pour dressing over and toss to coat.
  5. Chill for at least 1 hour before serving. Stir and adjust seasoning before serving if needed.
