Ingredients

  • 2 cups (250 g) all-purpose flour
  • 1 3/4 cups (350 g) granulated sugar
  • 3/4 cup (75 g) unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (240 ml) whole milk, room temperature
  • 1/2 cup (120 ml) vegetable oil
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1 cup (240 ml) hot coffee or hot water
  • 1 cup (170 g) chocolate chips (optional)
  • 8 oz (225 g) cream cheese, softened
  • 1/2 cup (115 g) unsalted butter, softened
  • 3 cups (360 g) powdered sugar, sifted
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line two 9-inch (23 cm) round cake pans with parchment paper.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add milk, vegetable oil, eggs, and vanilla extract. Mix until smooth.
  4. Slowly pour in hot coffee (or hot water) and mix carefully. Batter will be thin. Fold in chocolate chips if using.
  5. Divide batter evenly between prepared pans.
  6. Bake for 30–35 minutes, until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  7. Cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
  8. For frosting, beat cream cheese and butter until smooth. Gradually add powdered sugar and mix until creamy. Add vanilla extract and beat until light and fluffy.
  9. Place one cake layer on a plate, spread frosting evenly on top, add second layer, and frost top and sides.
  10. Refrigerate for at least 30 minutes before slicing to set the frosting.
