Ingredients

1 cup butter, softened

1 cup granulated sugar

2 eggs

1 teaspoon vanilla extract

3 cups all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup freeze-dried strawberries, crushed

1/2 cup fresh strawberries, diced and patted dry

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream butter and sugar until light and fluffy.
  3. Add eggs one at a time, beating well after each, then mix in vanilla extract.
  4. In a separate bowl, whisk together flour, baking powder, and salt.
  5. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  6. Fold in crushed freeze-dried strawberries and diced fresh strawberries.
  7. Using a cookie scoop, portion dough onto the baking sheet, spacing cookies about 2 inches apart.
