Ingredients

  • 12 teaspoons fresh lemon juice

  • 8 cherry tomatoes, halved

Instructions

  1. Toast the slices of bread until golden and crisp using a toaster, oven, or skillet.
  2. While the bread is toasting, slice the avocado in half, remove the pit, and scoop the flesh into a small bowl.
  3. Add lemon juice and salt to the avocado and mash with a fork until mostly smooth with some texture.
  4. Spread a thick layer of mashed avocado on each slice of toast.
  5. Top each toast with halved cherry tomatoes, cut side up.
