Ingredients

  • For the Chicken Tikka:
  • 1 cup plain yogurt
  • 2 tbsp ginger-garlic paste (or 1 tbsp minced ginger + 1 tbsp minced garlic)
  • 1 tbsp garam masala
  • 1/2 tsp cayenne pepper
  • 1/2 tsp ground black pepper
  • 1 tsp kosher salt
  • 1 lb boneless, skinless chicken breasts or thighs, cut into large chunks
  • For the Masala Sauce:
  • 2 tbsp butter
  • 2 tsp olive oil
  • 1/2 cup minced onion
  • 1 jalapeno, minced
  • 3 cloves garlic, minced
  • 1 tbsp minced ginger
  • 1 cup diced tomatoes
  • 2 tbsp tomato paste
  • 1 tbsp garam masala
  • 1 tsp paprika (optional)
  • 1 tsp kosher salt
  • 1 cup water
  • 1/2 cup heavy cream or sour cream
  • Fresh cilantro, for garnish
  • For the Garlic Naan:
  • 1 lb store-bought small pizza dough
  • 4 cloves garlic, minced
  • 2 tbsp melted butter

Instructions

  1. Marinate the Chicken: In a bowl, combine yogurt, garlic, ginger, garam masala, cayenne, pepper, and salt. Add chicken and coat well. Marinate for at least 30 minutes or overnight.
  2. Cook the Chicken: Thread chicken onto skewers or place on a foil-lined baking sheet. Broil at 450°F for 15–20 minutes or grill until charred and cooked through.
  3. Prepare the Sauce: In a pan, heat butter and olive oil. Sauté onions until golden, then add jalapeno, garlic, and ginger. Cook until fragrant.
  4. Stir in tomatoes, tomato paste, garam masala, paprika, and salt. Simmer briefly, then add water and simmer for 15 minutes.
  5. Stir in cream and simmer for a few more minutes. Add cooked chicken and coat in sauce.
  6. Make the Garlic Naan: Combine melted butter and garlic. Divide dough into 8 pieces, roll into circles, and cook on a hot greased skillet. Flip when bubbly and brush with garlic butter.
  7. Serve tikka masala with garlic naan and garnish with cilantro.

  • Use coconut milk instead of cream for a dairy-free version.
  • Tofu or paneer are great vegetarian swaps for chicken.
  • Canned tomatoes work well in place of fresh.
  • Skip skewers and broil chicken directly on a baking sheet if needed.
  • Naan is best fresh but chicken tikka masala freezes well for up to 2 months.
