Ingredients

  • 2 cups (250 g) all-purpose flour
  • 1 cup (90 g) rolled oats
  • 3/4 cup (150 g) granulated sugar
  • 3/4 cup (170 g) unsalted butter, melted
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 1/2 cups (400 g) pitted dates, chopped
  • 1 1/4 cups (300 ml) water
  • 2 tablespoons (30 g) unsalted butter
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract (for filling)

Instructions

  1. Preheat oven to 180°C (350°F). Line a 23 x 23 cm (9 x 9 inch) baking pan with parchment paper.
  2. In a saucepan, combine chopped dates and water. Cook over medium heat for 8–10 minutes until soft and thickened, stirring frequently.
  3. Remove from heat and stir in butter, lemon juice, and vanilla. Mash or blend until smooth. Let cool slightly.
  4. In a large bowl, mix flour, oats, sugar, baking powder, and salt.
  5. Add melted butter and vanilla to the dry mix. Stir until crumbly and well combined.
  6. Press two-thirds of the mixture into the prepared pan to form the base.
  7. Spread date caramel evenly over the base.
  8. Sprinkle remaining crumb mixture on top and press down gently.
  9. Bake for 30–35 minutes until golden on top.
  10. Cool completely in the pan before cutting into squares.

Notes

  • Use soft Medjool or Deglet Noor dates for smoothest texture.
  • Add cinnamon or cardamom for warm spice flavor.
  • Stir in nuts or drizzle with dark chocolate for extra richness.
  • Cool fully before slicing for clean layers.
  • Freeze well for up to 3 months.
