Ingredients

  • 1 cup semi-sweet chocolate chips
  • 1 cup granulated sugar
  • 2 large eggs

  • ½ cup unsweetened cocoa powder

Instructions

  1. Preheat the oven to 350°F (175°C). Lightly spray a 24-cup mini muffin pan with nonstick cooking spray and set aside.
  2. In a large microwave-safe bowl, heat the butter and chocolate chips for 60–90 seconds, whisking every 30 seconds until melted and smooth.
  3. Whisk in the granulated sugar. Add eggs one at a time, whisking after each addition until smooth. Stir in vanilla extract.
  4. Add the flour, kosher salt, baking powder, and cocoa powder. Stir until fully combined.
  5. Scoop the batter into the prepared mini muffin cups, filling each nearly to the top.
  6. Bake for 12–15 minutes, rotating the pan halfway through, until a toothpick inserted in the center comes out with a few moist crumbs.
