Ingredients

  • ¼ teaspoon freshly ground black pepper
  • 1 teaspoon dried Herbs de Provence
  • 1 teaspoon granulated sugar
  • 1 teaspoon Dijon mustard

Instructions

  1. Place the mixed greens in a large salad bowl or on a serving platter to form the base.
  2. Dice the tomato, cucumber, red bell pepper, and red onion.
  3. Scatter the chopped vegetables over the greens, followed by the Kalamata olives and pepperoncini if using.
  4. Sprinkle the crumbled feta cheese evenly over the top of the salad.
  5. In a small jar or bowl, combine lemon juice, olive oil, salt, pepper, Herbs de Provence, sugar, and Dijon mustard.
  6. Shake or whisk the dressing vigorously until emulsified and smooth.
