Ingredients

  • 1 1/2 cups warm water (about 110°F / 43°C)
  • 1 tablespoon granulated sugar
  • 2 1/4 teaspoons active dry yeast (1 packet)
  • 4 cups all-purpose flour
  • 1 teaspoon fine salt
  • 2 tablespoons unsalted butter, melted
  • For the baking soda bath: 10 cups water, 2/3 cup baking soda
  • For topping: 1 egg yolk, 1 tablespoon water, 1–2 teaspoons coarse salt, 2 tablespoons unsalted butter (for brushing after baking)

Instructions

  1. In a large mixing bowl, combine warm water and granulated sugar. Sprinkle yeast over top and let sit for 5 minutes until foamy.
  2. Add salt, melted butter, and flour. Mix until a soft dough forms.
  3. Knead the dough on a floured surface for 4–5 minutes until smooth and elastic.
  4. Place dough in a greased bowl, cover, and rest for 10 minutes.
  5. Preheat oven to 425°F (220°C) and line two baking sheets with parchment paper.
  6. Bring 10 cups of water to a boil. Carefully add 2/3 cup baking soda and reduce to a gentle boil.
  7. Divide dough into 6 equal portions. Roll each into an 18-inch rope and cut into 1-inch pieces.
  8. Working in batches, boil pretzel bites in the baking soda bath for 20–30 seconds. Remove with a slotted spoon and place on baking sheets.
  9. Whisk egg yolk with 1 tablespoon water. Brush over pretzel bites and sprinkle with coarse salt.
  10. Bake for 12–15 minutes or until golden brown.
  11. Remove from oven and immediately brush with melted butter. Serve warm.
