Ingredients

  • 1/2 medium honeydew melon, peeled, de-seeded, and cubed
  • 3 Persian cucumbers, roughly chopped
  • Juice of 2 limes (about 4 tablespoons)
  • 1 tablespoon lime zest
  • 1/4 cup fresh mint leaves, loosely packed
  • Pinch of kosher salt
  • 2 cups cold water
  • Optional: sweetener to taste (honey, agave, or maple syrup)
  • Ice cubes, for serving

Instructions

  1. Prepare the ingredients by cubing the honeydew, chopping the cucumbers, zesting and juicing the limes, and rinsing the mint leaves.
  2. Add honeydew, cucumbers, lime juice, lime zest, mint, salt, and water to a high-speed blender.
  3. Blend on medium-high for 2–3 minutes until smooth and frothy.
  4. Taste and adjust: add more lime juice for tang, or a sweetener if needed.
  5. Optional: Strain through a fine mesh sieve or nut milk bag for a smoother drink.
  6. Pour into a jar or pitcher. Serve immediately over ice or chill until ready to enjoy.

Notes

  • Substitute cantaloupe or watermelon for honeydew.
  • Add sparkling water before serving for a fizzy twist.
  • Use basil or cilantro instead of mint for a different herbal note.
  • Add a pinch of cayenne or a slice of fresh ginger for heat.
  • Replace some water with coconut water for extra hydration.
  • Freeze into popsicle molds for a frozen treat.
  • Make it a cocktail with a splash of gin or vodka.
  • Blend with ice for a slushie-style cooler.
