Ingredients

1 large egg

125 ml milk (or dairy-free alternative)

2 Tbsp vegetable oil

2 Tbsp maple syrup or honey

1 tsp vanilla extract

140 g self-raising flour

1 tsp baking powder

Pinch of salt

Butter or dairy-free spread, for frying

Instructions

  1. In a bowl, whisk the egg, then add milk, oil, syrup or honey, and vanilla. Mix well.
  2. In a separate bowl, sift together the self-raising flour, baking powder, and salt.
  3. Combine the wet and dry ingredients, stirring until smooth and lump-free.
  4. Transfer the batter to a squeeze bottle or piping bag (or use a spoon) and let rest for 5 minutes.
  5. Heat a non-stick pan over medium heat and melt a bit of butter or spread.
  6. Pipe or spoon dime-sized pancakes onto the pan. Cook 1–2 minutes on one side until golden, then flip and cook the other side.
  7. Repeat until all batter is used. Serve in a bowl with milk, syrup, fruit, or toppings of choice.
