Ingredients

  • 1 lb ground beef (80/20)
  • Kosher salt, to taste
  • Fresh black pepper, to taste
  • 6 six-inch flour tortillas
  • 6 slices muenster or provolone cheese
  • Shredded lettuce
  • Chopped white onion
  • Dill pickle chips
  • For the Burger Sauce:
  • 1/2 cup mayonnaise
  • 1/2 tsp paprika
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1 tsp yellow mustard
  • 1 tbsp minced bread & butter pickles
  • 1 tsp pickle brine
  • Fresh black pepper, to taste
  • 1/4 tsp Worcestershire sauce

Instructions

  1. Mix all burger sauce ingredients in a bowl. Chill in the refrigerator until ready to use.
  2. Season ground beef with salt and pepper and form into 6 balls (about 2.5 oz each).
  3. Preheat a flat top griddle or skillet over high heat until very hot.
  4. Place each beef ball on the hot surface and top with a tortilla. Press down firmly using a burger press or heavy object to flatten the meat under the tortilla.
  5. Cook for 2–3 minutes, pressing again to release more fat and get a good sear.
  6. Flip and cook the tortilla side for 2 minutes until crisp. Add cheese and let melt.
  7. Remove from heat, top with burger sauce, lettuce, onions, and pickles. Serve hot.

Notes

  • Use cheddar, pepper jack, or American cheese as alternatives.
  • Swap ground beef for turkey, chicken, or venison for a lighter version.
  • Gluten-free tortillas work, but won’t crisp as well as flour tortillas.
  • Add caramelized onions, bacon, or jalapeños for extra flavor.
  • Store sauce separately; tacos reheat best in a skillet.
