Ingredients

  • 23 oz (650 g) fresh strawberries
  • ½ cup (120 ml) whole milk, divided
  • 1¼ cups (300 ml) heavy cream
  • ⅓ cup (67 g) granulated sugar
  • 2 teaspoons (7 g) gelatin powder
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 3 tablespoons (36 g) granulated sugar (for topping)
  • 1 teaspoon lemon juice (for topping)
  • Pinch of salt (for topping)

Instructions

  1. Wash, hull, and blend the strawberries until smooth. Strain the puree to remove seeds. Divide into two portions: two-thirds for the panna cotta base and one-third for the topping.
  2. In a small bowl, combine gelatin with half of the milk. Let it bloom for 10 minutes.
  3. In a saucepan, heat heavy cream, remaining milk, sugar, and a pinch of salt over medium heat until hot but not boiling. Remove from heat and stir in vanilla extract.
  4. Add the bloomed gelatin mixture to the warm cream and whisk until fully dissolved.
  5. Stir in the larger portion of strawberry puree until evenly mixed.
  6. Pour the mixture into serving glasses or ramekins. Cover and refrigerate for at least 3 hours until set.
  7. To make the topping, combine the remaining strawberry puree with sugar, lemon juice, and a pinch of salt in a saucepan. Heat gently until sugar dissolves, then cool completely.
  8. Once panna cotta is set, spoon the strawberry topping over each portion. Chill until ready to serve.
