Ingredients

  • 810 fresh strawberries, thinly sliced (about 1 heaping cup)
  • 1 cup (240 g) plain or vanilla full-fat Greek yogurt
  • 1 tablespoon (21 g) honey
  • 2 tablespoons (32 g) peanut butter or almond butter
  • 1/4 cup (45 g) semi-sweet chocolate chips
  • 1 teaspoon (5 ml) coconut oil
  • Optional: 1 scoop (20–25 g) vanilla protein powder

Instructions

  1. Wash and slice the strawberries. Line a baking tray with parchment paper.
  2. Arrange the sliced strawberries evenly on the tray.
  3. In a bowl, mix Greek yogurt, honey, and nut butter until smooth. Add protein powder if using.
  4. Spread the yogurt mixture evenly over the strawberries.
  5. Melt chocolate chips with coconut oil in the microwave in 15-second intervals until smooth.
  6. Drizzle the melted chocolate over the yogurt layer.
  7. Freeze for about 2 hours or until firm.
  8. Break or slice into bark pieces. Serve immediately or store in freezer.
