Ingredients

  • 1 pound lean ground beef
  • 1 packet (1 ounce) taco seasoning mix
  • 1 can (10 ounces) diced tomatoes with green chiles, drained
  • 2 cups sharp cheddar cheese, freshly grated
  • 1 cup ranch dressing
  • 75 mini phyllo tart shells (about 5 packages of 15 shells each)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  3. Stir in taco seasoning and drained diced tomatoes with green chiles. Simmer for 5 minutes. Let cool slightly.
  4. In a large bowl, combine cheddar cheese and ranch dressing. Stir in the beef mixture until creamy and well mixed.
  5. Arrange phyllo shells on the baking sheet. Fill each shell generously with the taco mixture.
  6. Bake for 8–10 minutes (if thawed) or 10–13 minutes (if frozen), until golden and bubbly. Cool slightly before serving.
