Ingredients

  • 1 pound lean ground beef or ground turkey
  • 1 medium sweet onion, finely chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped (optional)
  • 1 to 2 tablespoons taco seasoning, to taste
  • 1/2 teaspoon garlic powder
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (15-ounce) can kidney beans, drained and rinsed
  • 1 (15-ounce) can pinto beans or white beans, drained and rinsed (optional)
  • 1 (15-ounce) can corn, drained
  • 1 (15-ounce) can tomato sauce
  • 1 (10-ounce) can diced tomatoes with green chilies
  • 1 (15-ounce) can diced tomatoes
  • 1/2 cup fresh salsa
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper, to taste
  • 1/2 to 1 cup warm water, as needed

Instructions

  1. In a large pot over medium heat, cook the ground beef until it begins to brown.
  2. Add chopped onion and bell peppers. Sauté for about 3 minutes, until softened. Drain excess fat.
  3. Stir in taco seasoning, garlic powder, salt, and pepper. Mix well to coat the meat and vegetables.
  4. Add beans, corn, tomato sauce, both kinds of diced tomatoes, and salsa. Stir to combine.
  5. Bring to a gentle simmer and cook for 20–40 minutes, stirring occasionally. Add warm water as needed to reach desired consistency.
  6. Stir in chopped cilantro just before serving. Taste and adjust seasoning if needed.
  7. Ladle into bowls and serve hot with your favorite toppings.
